The result of a joint venture with Cacaotales, this bar is made using Gran Chililique cacao from northern Peru (the Chulucanas district). This cacao is grown in the hills of Chililique by small farming cooperatives comprising 50% female workers.
Cacaotales works directly with local producers, supporting gender equality and promoting small-scale businesses.
Gran Chilique has already won the Peruvian Gold Cacao Award. It is largely harvested between December and May, and is left to dry in the sun before fermenting for 6-7 days in wooden boxes covered with plane tree leaves. The aromatic profile sees mid-to-high acidity notes recalling sweet tropical fruits such as pineapple. It also has low notes of toasted macadamia and median hints of cacao.
Chilique – Bonajuto Bean To Bar is yielded by a prized ingredient, and is made in keeping with our traditional low-temperature technique. The result is chocolate which showcases its characteristics.
